Baby Brielles are genuine Bluepoint oysters. The Deep Water Oyster Co family farm is situated a short distance from the Fire Island Inlet on the south shore of Long Island, NY. This allows for pristine incoming Atlantic Ocean nutrients to flow through these oysters every single day. Baby Brielles spend their entire lives at the very top of the water column, where their food is the richest, most abundant and the highest quality. On the front end there is a pleasantly bright and exciting brine! This is followed by smooth and mildly sweet tasting meat that finishes with a beautiful lingering salinity and gentle vegetal notes.
